Healthy Chicken Chili

I love making chili because its quick, full of flavor, super hearty, and you always have plenty of leftovers! I’ve found that it also freezers exceptionally well, so you can enjoy it weeks or months down the road. For this recipe, I use ground chicken in place of beef. You can feel free to make this your own by adding whatever extra veggies you’d like— this also tastes great served over cauliflower rice!

Healthy Chicken Chili

A hearty chili using ground chicken in place of beef to lighten it up!

Equipment

  • Pressure cooker or crock pot

Ingredients
  

  • 1 lb ground chicken
  • 1 can tomato purée⠀
  • 2 tbsp  tomato paste ⠀
  • 1 can red kidney beans ⠀
  • 1 can   black beans 
  • 1 red or orange bell pepper diced
  • 1 small  small white onion diced
  • 4 garlic cloves minced
  • 1 jalapeno
  • 2 tbsp chilli powder 
  • 1/2 tbsp cumin
  • 1/2 tbsp garlic powder 
  • 1 tbsp cacao powder 
  • 2 tbsp olive oil ⠀
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1 tbsp Apple cider vinegar
  • 1 cup beef or chicken broth
  • 1/2 tsp salt can add more if desired
  • 1/2 tsp pepper

Instructions
 

  • Set pressure cooker to “High Saute” setting⠀
  • Add 1 tbsp olive oil, heat for 30 seconds, then add chicken. Cook for about 3-5 minutes until no longer pink, making sure to crumble chicken and stir with spatula⠀
  • Remove chicken from pressure cooker, set aside in bowl⠀
  • Add 1 more tbsp oil to pressure cooker, then cook diced onion, garlic, jalapeno and bell pepper on medium heat until tender
  • After a few minutes, add chicken back to pot with veggies, transfer to low heat, stirring occasionally
  • While you wait, measure out dry spices and combine them into one bowl, whisk together⠀
  • Combine spices and remaining ingredients into pressure cooker, stir well⠀
  • Placed lid on with pressure valve sealed and select “bean/chilli” setting⠀
  • When pressure cooker signals completion, slowly turn the valve to release pressure and remove lid carefully⠀
  • Let cool then garnish chilli with cilantro, plain Greek yogurt and avocado

Notes

If you don’t have a pressure cooker, use a skillet to saute to ingredients in steps 1-5 then transfer to crock pot and cook for approximately 45 minutes
