Crispy Baked Sweet Potato Fries with Chipotle Lime Dip

The Perfect Sweet Potato Fries with Chipotle Mayo Dip

These fries are cooked to crispy perfection and come with a side of delicious dipping sauce!

  • Large metal bowl
  • Ice water


For the fries

  • 2 medium sweet potatoes, thinly sliced length wise
  • 1-2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cayenne pepper

For the Lime Chipolte Mayo Sauce

  • 1/4 cup Sir Kenningston Chipolte Mayo
  • 2 tbsp juice of fresh lime


  • To make the sweet potato fries:
  • Thinly slice sweet potatoes length-wise
  • Place sweet potatoes in a clean bowl pour ice water until all fries are covered
  • Let sweet potato sit in water for 1 hour
  • While the potatoes soak, make the chipotle mayo sauce by combining all ingredients listed above in a clean bowl and whisking together, cover and set in fridge
  • After an hour, preheat oven to 400 degrees
  • In a colander, strain potatoes and then rinse with cold water
  • Next, pat potatoes dry and transfer back to clean bowl
  • Toss with olive oil, salt and cayenne pepper
  • Then, when the oven is preheated, line baking sheet with parchment paper
  • Place sweet potato fries on parchment paper, evenly spread out
  • Bake at 400 for 30-40 minutes, tossing fries halfway through, or until they are browned and crispy
  • Plate the sweet potato fries and dip and enjoy immediately!
