
I love finding healthy ways of baking and I can’t tell you how happy I am that brands like Lily’s sugar free chocolate or Swerve sweetener exist. To me, they are worth every penny! You can find them in retailers like Walmart, Whole Foods, Wegmans, and Giant as well as Amazon. I also made me muffins after my feed on instagram was full of pumpkin recipes and I just wasn’t quite ready to go full “Fall recipes” but still wanted something soothing and filling as the cold temperatures move in. Low Sugar Banana Chocolate Chip Muffins
Chewy, spongy, delicious grain-free muffins with sugar free chocolate chips and sugar free sweetener making them the perfect healthy, low sugar treat or breakfast item!
Ingredients
- 2.5 cups BakeGood Paleo Flour
- 1/3 cup butter (or coconut oil but I prefer butter)
- 1 cup full fat canned coconut milk don't sub for regular coconut milk
- 1 tsp vanilla extract
- 1 brown banana, mashed
- 1/4 tsp salt
- 1/2 cup Lily's sugar free chocolate chips
- 2 tsp baking powder
- 1/2 cup Swerve sweetener or any sugar free sweetener of choice
Instructions
- Preheat oven to 350. Placed paper liners in muffin tin (roughlyabout 12-14)
- In a large bowl, whisk together coconut milk, egg, vanilla extract and butter
- Next, add all remaining ingredients to bowl and mix gently, about 5 or so strikes until well combined but not overmixed
- Spoon batter into lined muffin tin roughly ¾ of the way full
- Bake for 18-22 minutes or until toothpick comes out clean
